In our last article, we mentioned some ways to incorporate CBD into your kitchen adventures. This article is a continuation of that, but now with some tried-and-true recipes that are sure to delight your taste buds with every bite! Springtime is fast approaching, and there’s something warm and comforting about enjoying a homemade treat. Rather than scour the internet for low-heat, no-bake, or minimal prep-time recipes, we’ve compiled a list of some of our favorites that we hope will make their home in your kitchen as well! We’ll start out with a no-bake, a low-heat, a salad dressing, and finally, a frozen fruit treat that will be perfect once summer rolls around!
No Bake? No Problem! Chocolate Peanut Butter Oat Cookies
Most recipes online will recommend using CBD oils or water based tinctures, but we managed to find one that uses CBD isolate! Not many companies offer this particular form of CBD, but we here at ERTH Wellness sure do! These cookies are gooey, crunchy, and offer the perfect touch of sweetness we’re confident you’ll love. As a side note, this recipe uses nuts and oats, so you’ll want to be mindful of those with food allergies curious to sample the goods. Each cookie contains about 27mg of CBD and the recipe yields about 3 dozen.
Ingredients
- 1 ¾ cups of white sugar
- 1 gram of CBD isolate (990mg of CBD)
- ½ Cup of milk
- ½ cup crunchy peanut butter
- 3 cups quick-cooking oats
- 1 teaspoon vanilla extract
- ½ cup of butter (melted)
- 4 tablespoons of unsweetened cocoa powder.
- 4 tablespoons of maple syrup
Directions
Mix together the melted butter and CBD isolate, ensuring that the isolate fully dissolved in the butter. Pour the combined butter and isolate into a medium saucepan and add the cocoa, sugar, and milk. Bring to a boil for about 90 seconds and remove from heat. Gently fold in the oats, peanut butter, vanilla, and maple syrup. You should end up with a thick enough “dough” to scoop out with a spoon. Carefully scoop out a heaping teaspoon of the dough and plop onto a parchment paper-lined baking sheet. Pop in the fridge and allow the cool temperature to harden the cookies.
Bonus tip: If the dough is cool enough to touch, you can opt to scoop out the dough with a spoon and use your hands to shape into rounded balls. If you feel extra creative, you can use cookie cutters to make intricate and playful designs before allowing the dough to fully cool.
Low Heat Chocolate Chip Nut Cookies
Don’t care to share? Go nuts! This recipe yields about four cookies and roughly 5mg of CBD per cookie. These low-heat treats are ideal for late night munchies, quiet movie nights, or whenever that sweet tooth craving is impossible to ignore. Chocolate chip cookies have always been a fan favorite, and now with a smooth infusion of CBD oil! This recipe is slightly lower than the traditional baking temp of 350℉, meaning your precious CBD won’t reach its boiling point. The recipe also calls for chopped nuts, but doesn’t specify which ones. Personally, chopped pecans are always a good pairing with chocolate chips, but feel free to whichever ones you want!
Ingredients
- 2 tbsp unsalted butter , softened
- 1/4 cup packed brown sugar
- 1 large egg yolk
- 1/2 tsp vanilla
- 20 mg CBD oil
- 1/3 cup all-purpose flour
- 1/8 tsp baking soda
- 1/8 tsp salt
- 3 tbsp dark chocolate chips
- 3 tbsp finely chopped nuts (we used pecans)
- 3 tbsp pumpkin seeds
- 1 tbsp flaxseed
Directions
Start off by preheating your oven to 325℉, ensuring that the oven rack is placed in the center. Use a mixer to blend your butter and sugar in a medium bowl until creamy. Add in the egg yolk, vanilla, and CBD oil until combined and set aside. In a separate bowl, stir the flour, salt, and baking soda until combined. Fold the dry mixture into the wet ingredients and mix well. Lastly, add in your chopped nuts, chocolate chips, pumpkin seeds, and flaxseeds.
Using a large spoon or your hands, divide the cookie dough into four equal portions. Knead each section of the cookie dough into balls and place onto a parchment-lined baking sheet (approx. 3” apart). Place into the oven and set a timer for about 15-18 minutes. Since the cookies will spread as they bake, you’ll want to check on them at the 15 minute mark. Once cookies have baked to a golden brown around the edges, remove from the oven and let cool for about two minutes. Use a rubber spatula to separate from the baking sheet, with the option to transfer to a cookie rack to cool fully. Serve with a tall glass of milk or hot cup of coffee and dig in!
Bonus tip: Be sure to store these cookies in an airtight container or resealable plastic bag that you can store in a cool dark place. If you’re feeling especially adventurous, you can substitute the 20 mg of CBD oil for 4 mg THC (check out our sister site TwoHawk Extracts) for a more blitzed experience.
Sublime Lime CBD Salad Dressing
Whether you’re trying to eat better or are craving fresh greens, there’s an easy way to add CBD into your salad dressing. It’s recommended to use this dressing with strong flavors to help minimize the bitterness of naturally flavored hemp oil. Consider using arugula, radicchio, cranberries, and grated cheeses like parmesan or pecorino. There’s not a lot of prep time needed for this salad dressing and can be whipped up in about five minutes. Unfortunately, it’s nearly impossible to tell how much CBD you’re consuming per serving. Be mindful if you’re making this salad for just yourself over the course of a single meal or several.
Ingredients
- 1 tablespoon freshly squeezed lime juice (from half a lime)
- 1 teaspoon Dijon mustard
- 1/2 teaspoon kosher salt
- 1 teaspoon mild raw honey
- 1 1/2 tablespoons extra virgin olive oil
- 1/2 teaspoon water soluble CBD oil
Directions
Use a medium salad bowl and a whisk to combine all the ingredients except the olive oil and CBD oil: mustard, honey, salt, and lemon juice. Continue whisking as you slowly fold in the olive oil and CBD oil. Once emulsified, generously drizzle over fresh greens
Bonus tip: Check out some of our other preferred toppings: nuts, dried fruit, olives, corn, rotisserie chicken, boiled egg pieces, etc. Salad is only as boring as you expect it to be. Add some flavors and colors to help you not only want salad, but crave it!
The Mango Tango Salad Dressing: Great for Summer BBQ’s!
Something about fresh ripe mangos and sweltering summer heat just go together. That’s why we put together this mouthwatering salad dressing that will transport you to a tropical paradise with every mouthful! There’s another reason why we chose mangos for this CBD recipe…mangos actually contain myrcene. Myrcene is a terpene that’s commonly found in hemp and is known for its calming relaxing effects. Check out this summer-ready pairing of mangos and hemp that’s sure to kick off the summer in the best way possible! Again, there’s no way to be sure how much CBD you’re consuming with each portion, so be mindful of how much salad dressing you consume in each serving portion.
Ingredients
- 1/2 cup chopped mango
- 1 tbs white wine vinegar
- 2 tbs olive oil
- 2 tsp honey
- 1/4 tsp salt
- 2 droppers CBD oil
Directions
Load up all the ingredients into a food processor or blender. Blend on high until consistency is smooth and creamy. Use a salad spoon to generously pour the pureed mango hemp dressing on top of your favorite greens (romaine, kale, broccoli, chard, etc.). Serve chilled or at room temperature.
Bonus tip: You can store the dressing in a squeeze bottle for several days. Consider making bigger batches and freezing until ready to use, as this won’t affect the potency of the CBD.
Frozen Watermelon & Mint Popsicles
With summer heat waves just around the corner, it's time to start thinking ahead of ways to keep cool. Nothing screams summer like watermelon and at the peak of the season, watermelons are incredibly sweet and refreshing. With just a touch of mint for a cooling sensation, you’ll want to make these homemade popsicles year ‘round. When following this recipe, you should yield about 6 popsicles (depending on the mold count you have) that contain about 10 mg of CBD each. This recipe calls for some additional hardware (stainer, popsicle molds, wooden sticks), so be sure to check your cupboards prior to making these popsicles.
Ingredients
- ½ small seedless watermelon
- 10 mint leaves
- 1 teaspoon fresh-squeezed lime juice
- ½ teaspoon unflavored full-spectrum hemp CBD tincture
- ½ ounce organic light agave nectar
Directions
Start off by cutting your seedless watermelon in half. Scoop out as much of the flesh as you can into your food processor or blended. Toss in the mint leaves and purée until the chunks turn into liquid. Use a fine mesh strainer to separate the pulp remains from the juice. Repeat until only the liquid remains. Rinse your blender out (to remove any lingering pulp) and pour watermelon mint liquid back in. Add in the lime juice, agave nectar, and CBD tincture and blend for 10-15 seconds. Carefully pour even amounts of liquid into the popsicle molds and place popsicle stick inside the mold. To avoid sticks freezing to one side, you’ll need to move the sticks back to the center at least once every few hours until the sticks are rigid. Once the sticks no longer move, leave the popsicles to fully freeze overnight. Your freshly frozen popsicles will be ready to enjoy by morning and should sport a lovely layered look. If you don’t want to immediately consume, you can store in resealable bags or wrap in cellophane bags. Be sure to rinse out the molds and store for future use.
Bonus tips: If mint isn’t readily available near you, consider using mint-flavored tincture. If you’re short on time, try finding freshly-squeezed watermelon juice from organic health food stores or fresh-squeezed juice shops. Additionally, if you’re struggling to get the popsicles out of the molds, use a tall mug filled with warm water. Dip the frozen molds into the warm water to gently loosen the rigidity and slide the popsicles out cleanly.
Final Thoughts
Who knew that adding CBD to your recipes would be so much fun! Hopefully these recipes have inspired you to search for more that you and your loved ones can enjoy. As always, make sure to inform anyone looking to consume your treats that there’s CBD in them. Since some people may have personal or professional reasons for abstaining from hemp, they deserve to know what they’re eating. Feel free to experiment with the amount of CBD you use, and consider keeping a journal to document what worked and what flopped.
